Where exactly does Bulgaria stand on the map of global gastronomy? This question is about to be answered, thanks to a new initiative that aims to elevate the local culinary scene. At the end of October, it will become clear which restaurants are the most successful, having shown the courage to be evaluated by experts. But what exactly does this mean for Bulgaria, and when can we expect a Michelin Guide?
The air is thick with anticipation. The people who have dedicated themselves to food know that something big is coming. The first BiorestBest ranking, which is being held in Bulgaria, promises to give a boost to the culinary world here. The initiative is led by a jury of international culinary critics, including a member of the jury of the prestigious 50 Best ranking.
To support the path of Bulgarian cuisine towards world standards, BiorestBest has invited a former Michelin inspector to anonymously visit the participants during the summer. The purpose of these visits is not only evaluation within the framework of the initiative but also an overall improvement in the quality of the service offered.
The aroma of excitement permeates the city streets. Restaurant guests in Bulgaria are people who value pleasure, good food, and entertainment. They have the potential to become increasingly discerning connoisseurs of cuisine. To achieve real progress, customers must be encouraged to change their focus - to seek and reward quality and mastery in the plate, and not just quantity.
"One thing is certain - the event is a precursor that sooner or later Michelin will come to Bulgaria", shares Miguel Rial, a former Michelin inspector, who in recent weeks has been getting acquainted with the concepts of key places here.
A total of 7 restaurants are admitted to participate in BiorestBest, including: Aria, Fake French, Komat and Cosmos, Molè and Valere in Plovdiv, Teya in Chalet Petrohan.
