On Easter, the Bulgarian urban and rural table will once again unite colorful eggs, kozunak and lamb. New preferences are added to them, but the symbolism and family tradition remain unchanged.

This year, Orthodox Easter in Bulgaria is celebrated on Sunday, when thousands of families will gather around the festive table after the seven-week Easter fast. For believers, this is the day of "Christ's Resurrection", and the food on the table is not just a menu, but a system of symbols - from the red egg to the lamb meat and the fragrant kozunak. Despite the change in habits and the influence of modern cuisine, three main elements remain almost mandatory: painted eggs, kozunak and roasted lamb.

Colorful eggs: the first red and the ritual of "tapping"

Painted eggs are the most visible symbol of Easter - a sign of new life and the victory over death. Tradition dictates that the first egg be painted red, often on the Thursday before the holiday, and with it to cross the forehead of the children "for health". The remaining eggs are colored in different colors and decorated with wax ornaments, stickers or leaves and stencils - a combination of old techniques and new ideas.

The ritual of "egg tapping" on Sunday morning remains a favorite moment for young and old. Whoever remains with a "strong" egg is considered the healthiest during the year - a game that brings laughter and competition, but also strengthens the feeling of community. In cities, ready-painted eggs are increasingly bought, but many families continue to gather at home to paint together - a kind of pre-Easter "workshop" by tradition.

Kozunak: the sweet sign of the end of Lent

Kozunak is an indispensable part of the Easter Sunday lunch and is often the first thing people reach for after the night service. The traditional Bulgarian kozunak is prepared from flour, milk, eggs, sugar and fat, with vanilla and lemon zest, and the characteristic "thread consistency" is a sign that the dough is well kneaded and risen. In the classic version, raisins, almonds, Turkish delight or dried fruits are added to it, and sometimes it is decorated with a red egg placed on top.

In recent years, urban households are increasingly combining homemade kozunak with one bought from a bakery or supermarket. The demand for kozunaks remains high, despite the rise in the price of flour, eggs and energy, which makes the Easter basket more expensive. For many, however, kozunak is a "sweet luxury that cannot be missed" because it marks the end of the long fast and brings a taste of childhood memories.

Roasted lamb: the connection with spring and sacrifice

Lamb meat is the other central element of the Easter table. It carries both biblical symbolism - as an image of sacrifice and salvation - and purely seasonal logic: spring is the traditional time for lamb. The most popular options include baked lamb in the oven with potatoes, lamb leg with rosemary and garlic, lamb shanks, as well as the classic "drob-sarma" - rice with lamb giblets, spices and a dressing of eggs and yogurt.

The increase in the price of fresh lamb in recent years makes the holiday more burdensome for the family budget and motivates some households to buy smaller quantities or to combine lamb with other types of meat. However, lamb remains "the king of the table" - even in more modest portions, it is present as a symbol of the holiday and an occasion for a common table.

Salads, side dishes and the "green" side of Easter

The Easter table rarely ends with just eggs, kozunak and lamb. It almost necessarily includes spring salads - green salad with radishes, cucumbers, fresh onions and lettuce, seasoned with lemon and olive oil or sunflower oil. There are also side dishes such as baked potatoes, rice with vegetables, and in some regions - dishes with sorrel, spinach or nettles, which are reminiscent of the days of fasting.

These fresh dishes are not just an addition, but an important counterpoint to the heavier meat and flour foods. After a long abstinence from animal products, many people feel the need for balance - vegetables bring lightness and color, and for families who do not consume lamb, they are often a main element. Thus, spring enters the table not only as a date in the calendar, but also as a taste and aroma.

Preferences today: between tradition and modern recipes

Modern Bulgarian households combine classic Easter recipes with modern interpretations. In addition to traditional kozunak, variants with chocolate, cream, hazelnut paste filling or dried fruit and nut filling are becoming increasingly popular. Some families replace part of the sugar with honey or use whole-grain flour, trying to combine tradition with a desire for "healthier" desserts.

With the main dishes, some of the younger housewives experiment with marinated lamb, new cooking techniques or combining classic spices - mint, garlic, black pepper - with more non-standard flavors. At the same time, many families, especially in large cities, order ready-made dishes from restaurants and catering services - a compromise between lack of time and the desire for a "traditional" table.

Price and affordability: the Easter table between inflation and social initiatives

Inflation in recent years is putting pressure on the Easter budget - eggs, flour, sugar, butter and lamb are getting more expensive, and this makes the holiday more expensive for many families. Some retail chains and institutions respond with promotional packages and initiatives such as an "Easter basket", aimed at more affordable prices for the main products.

For some households, this means more careful menu planning - smaller portions of meat, more emphasis on salads and homemade sweets. Nevertheless, Bulgarians are rarely willing to completely give up the symbolic Easter dishes: they may become more modest, but they hardly disappear from the table, because they are perceived as part of the very meaning of the holiday.

The Easter table as a mirror of identity

Traditional Easter dishes are much more than a set of recipes. They are a "language" in which Bulgarians tell about themselves - about the connection with Orthodoxy, with childhood memories, with the tastes of their grandmothers' recipes and with the desire to pass on something of all this to the next generations. Even when the kozunak is bought from a bakery and the lamb from a restaurant, the gesture of gathering around the table with eggs, bread and meat retains its meaning.

On Sunday, many Bulgarian families will again hear the familiar "Christ is risen" and will answer "Indeed He is risen", tapping each other with colorful eggs over plates of lamb and a piece of kozunak. Thus, the Easter table remains a living ritual - a place where tradition and modernity sit side by side, and the taste of the holiday continues to be part of the Bulgarian identity.
