On November 15, 2025, a Saturday, in the heart of Burgas, at the Vocational High School of Tourism "Prof. Asen Zlatarov", an event will take place that promises to bring together flavors and culture. From 11:00 AM, the doors will open for a workshop on preparing the traditional St. Martin's croissants, also known as "rogale marcińskie".
These sweet pastries, created from masterfully crafted puff pastry, are filled with a filling of white poppy seeds, walnuts, and juicy raisins.
This culinary adventure is part of the "Polonia teaches Polishness" cycle and is organized by the Embassy of the Republic of Poland in Sofia, in cooperation with the Polish Institute in Sofia and the Polish community in Burgas. The air is filled with anticipation of the aromatic baked goods, and the unique flavors of Poland are also waiting.
St. Martin's croissants are not just a pastry - they are a symbol of Polish culture and are traditionally prepared on November 11, on Poland's Independence Day. This holiday coincides with the day of St. Martin of Tours. According to the belief, the shape of the croissants resembles the horseshoes of the saint's horse, symbolizing the generosity and kindness associated with his name. As those present gather, the excitement grows. Trembling glances are seen from those who will soon immerse themselves in the mysteries of Polish cuisine.
The workshop will be led by Mrs. Zofia Polcin-Ivanova, a representative of the Polish community in Burgas. She will reveal the secrets of authentic Polish croissants, show step by step how they are prepared and share knowledge about their significance in Polish cuisine. Under the skillful guidance of Mrs. Polcin-Ivanova, the participants will have the opportunity to touch the tradition and learn how to prepare this exquisite culinary delight.
