The official publication of the updated Regulation on Specific Requirements for Dairy Products marks a significant moment in the regulation of the food sector. The document, modifying Decree No. 260/2021, sets extremely strict criteria for labeling and production standards.
A key focus of the new regulation is the mandatory clear labeling of products with non-traditional ingredients. Manufacturers are obliged to mark the presence of "imitating" dairy components, such as plant proteins, which ensures full consumer awareness in their market choice.
The definition of "raw milk" has been scientifically refined – a temperature regime up to 40 °C and the absence of alternative processing methods. The regulation also regulates strict requirements for the content of dairy substances in traditional products such as yogurt, cheese, and kashkaval.
Additional restrictions have been introduced regarding sweeteners and emulsifiers, aimed at preserving the authenticity of dairy products. The main goal of the regulation is to prevent counterfeits and guarantee high quality.
The Bulgarian Food Safety Agency (BFSA) will launch large-scale checks for compliance with the new requirements starting May 2025. Initial results show high discipline among manufacturers and a lack of significant deviations from the introduced norms.
