Roasted Peppers with Tomato-Garlic Sauce

Prep time: ~40 minutes

Ingredients:

– 8 roasted, peeled red peppers
– 3 tbsp oil
– 3 ripe tomatoes or 1 cup puree
– 3 garlic cloves
– Salt and sugar to taste
– Parsley for garnish

Preparation:

1. Chop or grate the tomatoes.

2. Heat oil and sauté tomatoes for 10–15 minutes until thick.

3. Add minced garlic, salt, and a pinch of sugar. Simmer for 2–3 minutes.

4. Place the peppers on a dish and cover with warm sauce.

5. Garnish with parsley and serve.
