On February 12, 2025, the Ministry of Agriculture presented a new draft standard that limits the water content in brine cheese to a maximum of 65%. The idea is to prevent the production of cheap, low-quality imitations that add water instead of a real product.
A comment from the "Active Consumers" Association confirms that "water is being added excessively" in cheese with increased water content. According to them, the new standard will provide a clearer guarantee of the product's quality for consumers. One of the leading motives in the project is to protect local producers from unfair competition and to improve the quality structure of the market.

The project also includes labeling with an indication of the water content, which will facilitate the consumer's choice. This is expected to lead to more authentic and traditional production, in line with the requirements of the Bulgarian State Standard (BDS) and the protected designations of origin (PDO).
