The culinary scene in Bulgaria is undergoing a true transformation, a large-scale study by the National Institute for Culinary Research shows. Experts have documented significant progress in the consumption of plant-based dishes among Bulgarian households.

The study, conducted in July 2025, reveals categorical data: nearly 35% of surveyed families declare that they cook vegetarian or vegan dishes at least three times a week. This result represents an impressive growth of 12% compared to the previous 2023 year.

Specialists analyze this trend as a direct result of growing ecological culture and focus on a healthy lifestyle. Legumes, grains, and vegetables are becoming preferred ingredients, with parallel growth in demand for plant-based meat substitutes.

The culinary industry is quickly adapting to new consumer attitudes. Bloggers, restaurants, and specialized stores are already offering diverse recipes and products aimed at this rapidly expanding market segment.
