Preparation time: ~35 minutes
Ingredients (serves 4):
- 300 g fresh nettle (cleaned and washed)
- 1 small onion
- 1 carrot
- 2 garlic cloves
- 3 tbsp rice
- 1 tbsp flour (optional – for thickening)
- 2 tbsp oil or olive oil
- Salt and black pepper to taste
- Lemon (for serving)
Preparation:
1. Finely chop the onion and carrot, and sauté in oil for about 5 minutes.
2. Add finely chopped garlic and stir.
3. Add the rice and sauté for another 2–3 minutes.
4. Pour in about 1.2 L of hot water and add the nettle. Simmer for 20 minutes.
5. Optionally, thicken with a little flour dissolved in water.
6. Season with salt and pepper.
7. Serve hot with lemon or crumbled cheese.
