Gluten-free potato pizza with eggs and yellow cheese

An appetizing gluten-free "pizza" with a base of potatoes and eggs, BBQ sauce, yellow cheese, and your favorite sausage – an easy idea for a quick flour-free dinner.

"Gluten-free potato pizza with eggs" is a wonderful alternative to traditional pizza – without flour and gluten, but with a rich, crispy potato base and a fluffy egg layer. The combination of BBQ sauce, yellow cheese, and thinly sliced sausage makes the dish both aromatic and satisfying, and it is completely possible to prepare in a regular pan.

Ingredients:
2 large potatoes
2 tbsp cooking oil
10 g butter
salt and pepper
2 eggs
3 tbsp BBQ sauce
dried oregano (if you have any)
120 g yellow cheese (kashkaval) or other hard cheese of your choice
a few thin slices of soft sausage of your choice ("bacon", "ham", "Italian salami", "dry sausage" or other)

Instructions:

1. Peel the potatoes, wash them well, dry, and slice them into very thin rounds. Stack a few rounds on top of each other and cut them crosswise to get fine potato "matchsticks".

2. In a large non-stick pan with a diameter of about 26–28 cm, heat the oil over medium heat, add the butter and stir until melted. Add the sliced potatoes, season with salt and pepper, and mix well so they are evenly coated with fat. Level the potato layer and let it cook for about 8 minutes, until it sets and turns slightly golden.

3. While the potatoes are cooking, beat the eggs in a bowl with salt and pepper until you get a homogeneous mixture.

4. Using a large plate, carefully flip the potato bake and return it to the pan with the unbaked side down. Pour the beaten eggs evenly over the top. Cover with a lid and leave on medium heat for another 5 minutes, so the egg layer sets.

5. Meanwhile, grate the yellow cheese (or chosen hard cheese) and cut the sausage into thin pieces or slices.

6. Brush the top surface of the bake with BBQ sauce and sprinkle with dried oregano if you have any. Distribute half of the grated cheese, arrange the sausage slices on top, and cover with the rest of the cheese. Put the lid back on and let the dish cook for another 5 minutes, until the cheese has melted and is slightly browned.

7. Carefully slide the finished potato "pizza" onto a large plate or tray and cut into triangular pieces, similar to a classic pizza. Serve and eat while warm to enjoy the crispy base and melted yellow cheese.
